An old fashioned dish for the holiday dinner table. Braising cabbage this way makes it lusciously silky and aromatic with the flavours of spice and fruit. The enchanting sweet-and-sour taste comes from the green apples, cider vinegar and Blyss monkfuit.

Ingredients
- 1 tsp olive oil
- 2 slices thick-cut bacon cut into 1/2β³ wide strips
- 1 1/2 tbs unsalted butter
- 1 medium yellow onion thinly sliced
- coarse salt and fresh ground black pepper
- 2 small green apples, peeled, cored and thinly sliced
- 1 tsp grated fresh ginger
- 1 medium head red cabbage, thinly sliced
- 1/4 cider vinegar
- 2 tbs Blyss monkfruit sweetener
Method
- Heat the oven to 300 degrees
- Fry the bacon: combine the oil and bacon in a deep large ovenproof skillet on medium heat till bacon begins to crisp. Set aside.
- Saute the aromatics and wilting the cabbage: Add the butter to the bacon fat and stir in the sliced onion. Season with salt and pepperfor 2 min. Add apple and ginger and stir to combine. Increase heat and add cabbage, saute for 6min. Add vinegar and Blyss. Add the bacon. Stir and let liquid come to a boil.Β
- To braise: cover the pan and place in the middle of the oven. Stir every 20min. Bake for 1hr.
- Serve warm.
