Fluffy Keto pandan cake

For those who love this very special cake characteristic of Malaysia and Singapore. Pandan is fragrant Asian leaf that is reminiscent of roses and vanilla combined.

Ingredients

Yolk batter:

  • 8 yolk
  • 80g Blyss monkfruit sweetener
  • 120ml coconut milk
  • 240g almond flour
  • 2 tsp baking powder
  • 50g pandan juice
  • pinch of salt
  • 3 tbsp neutral coconut oil

Egg white batter:

  • 8 egg whites
  • 80g Blyss monkfruit sweetener
  • 2 tsp cream of tartar

Method

  1. Preheat oven to 180 deg C.
  2. Beat egg yolks with sugar till pale. Add other ingredients for yolk batter and beat till combined.
  3. Beat egg whites till peaks form, add cream of tartar and sugar and beat till stiff peaks form. 
  4. Fold in the two batters in 3 parts till all are combined.
  5. Pour into baking tin and bake for 40min. Skewer should come out clean.
