Ingredients
Yolk batter:
- 8 yolk
- 80g Blyss monkfruit sweetener
- 120ml coconut milk
- 240g almond flour
- 2 tsp baking powder
- 50g pandan juice
- pinch of salt
- 3 tbsp neutral coconut oil
Egg white batter:
- 8 egg whites
- 80g Blyss monkfruit sweetener
- 2 tsp cream of tartar
Method
- Preheat oven to 180 deg C.
- Beat egg yolks with sugar till pale. Add other ingredients for yolk batter and beat till combined.
- Beat egg whites till peaks form, add cream of tartar and sugar and beat till stiff peaks form.
- Fold in the two batters in 3 parts till all are combined.
- Pour into baking tin and bake for 40min. Skewer should come out clean.
