Chia and Sesame Keto Bread

In pursuit of the best tasting keto bread – non-eggy, stretchy, tasty, fragrant and lovely to chew on. Great for sandwiches and burgers.

Ingredients

  • 4 egg whites
  • 1 egg yolk
  • 2 tbs chia seeds
  • 2 tbs sesame seed
  • 50g butter softened
  • 2 tsp baking powder
  • 2 tbs psyllium husk powder
  • 1 tsp pink salt
  • 1 tbs Blyss monkfruit sweetener
  • 2 cups ground almonds
  • 1 cup flax meal
  • 2 cups hot water
  • 2 tsp cream of tartarΒ 
  • 2 tbs greek yoghurt

Method

  1. Heat oven at 180 degrees C.
  2. Beat egg whites till soft peaks form. Add cream of tartar and beat till stiff.
  3. In another bowl incorporate all the dry ingredients and stir till mixed well. Add in the egg yolk, butter and greek yoghurt and combine with spoon or egg beater. Add in hot water and combine. Fold in egg, add the seeds and combine into a dough.
  4. Line a standard sized bread tin and pour in the dough. Knock the tin on the table a few times to spread the dough.
  5. Bake for 30min.
  6. If you are shaping into burger buns, use wet hands and form into balls 3 inches across. Bake on a lined tray for 20min.Β Β 
  7. Enjoy!
