Delicious low carb, keto, unicorn and pride friendly cupcakes sweetened with Blyss Monkfruit Sweetener.

Ingredients
- 200g almond or coconut flour
- 80g Blyss Monkfruit sweetener
- 50g salted buuter
- 2 eggs
- 1 tsp baking soda
- 2 tsp of vanilla extract
- organic food colouring (our favourite is pandan, butterfly pea, saffron and beet)
Method
- Combine eggs and butter in a bowl till smooth. Add Blyss Monkfruit sweetener and vanilla till combined. Lastly, add the flour and mix together.
- Divide the batter into 5 bowls and colour each potion
- Spoon into cupcake molds in overlapping layers
- Bake in a preheated oven at 180 degrees Celsius for 25min
