Rainbow unicorn cupcakes

Delicious low carb, keto, unicorn and pride friendly cupcakes sweetened with Blyss Monkfruit Sweetener.

Ingredients

  • 200g almond or coconut flour
  • 80g Blyss Monkfruit sweetener
  • 50g salted buuter
  • 2 eggs
  • 1 tsp baking soda
  • 2 tsp of vanilla extract
  • organic food colouring (our favourite is pandan, butterfly pea, saffron and beet) 

Method

  • Combine eggs and butter in a bowl till smooth. Add Blyss Monkfruit sweetener and vanilla till combined. Lastly, add the flour and mix together.
  • Divide the batter into 5 bowls and colour each potion
  • Spoon into cupcake molds in overlapping layers
  • Bake in a preheated oven at 180 degrees Celsius for 25min
