Keto-ers and low carbers are always on the lookout for noodle alternatives. This recipe is a winner for a filling and protein rich choice, filled with the natural crunch, frangrance and sweetness of veggies.

Low carb leather noodles

Ingredients
1 cup carrots juliened
1 cups bean sprouts
250g thousand-leaf tofu
1 cup coriander stems and leaves cut into 2 inch lengths
1/2 cup wood ear mushrooms juliened
5 tbs olive oil
2 tbs sea salt
1 tbs oyster sauce
1 cup water
1 tsp sesame oil
sesame seeds to sprinkle over the cooked dish
Method
- Open up the tofu and separate the layers before slicing into noodles.
- In a heated pan, cook the carrots with some oil till softened and caramelised.
- Add in the wood ear mushrooms and the tofu. Stir and add in the water and the seasoning.
- When the tofu is well softened, absorbing the flavours of the condiments, add in the beansprouts and after a quick turn, switch off the heat and serve with coriander. Fresh cut chillis add to the refreshing taste of this crunchy dish.
