Nothing tops a lovely sweet-sour parfait for dessert. This old traditional recipe that has been enjoyed in the family for generations.

Blyss berry parfait

Ingredients
- 1/2 cup Blyss monkfruit sweetener
- 2 eggs, separated
- 1 cup heavy cream
- 1/2 tsp vanilla
- 1/4 cup berries
Method
- Beat the egg yolks. Heat syrup in double boiler, and whip in the egg yolks, beating until thick. Remove from double boiler and pour over stiffly beaten egg whites, and blend with 1/4 cup of berries.
- Chill thoroughly, at least for one hour. Then fold in the whipped cream and freeze for 3 or 4 hours. Place in individual glasses to freeze if preferred. Decorate with berries.
