Chicken Sweet and Sour

Ingredients:
– 2 boneless, skinless chicken breasts, cut into bite-sized pieces
– 1 red bell pepper, diced
– 1 green bell pepper, diced
– 1 onion, diced
– 1 can of pineapple chunks (drained, reserve juice)
– 2 tablespoons soy sauce
– 3 tablespoons Blyss Monkfruit Sweetener
– 1/4 cup apple cider vinegar
– 1/2 cup ketchup
– 1 tablespoon cornstarch
– 2 tablespoons water
– Salt and pepper to taste
– 2 tablespoons vegetable oil

Method

Instructions:

1. Prepare the Chicken:
Season the chicken pieces with salt and pepper.

2. Cook the Chicken:
In a large skillet, heat the vegetable oil over medium-high heat. Add the chicken and cook until browned and cooked through. Remove the chicken from the skillet and set aside.

3. Cook the Vegetables:
