A delicious mild Indian style dish with the fresh taste of chilli and juicy chicken thighs. You can choose to toss the chicken in the chilli tomato paste or serve with the paste on the side.

Ingredients
Turmeric chicken
- 6 chicken thighs – with two slashes made against the grain of the meat to allow better marination
- 1 tsp turmeric powder
- 2 inch ginger sliced thinly
- 1 whole clove of garlic broken up loosely
- 3 whole large green chilies
- 4 tbs olive oil
- 1/2 tsp salt
Tomato Chili Chutney
- 4 small red chilies chopped finely
- 8 cloves shallot sliced thinly
- 1 tbs grated ginger
- 1 tsp salt
- 4 tbs olive oil
- 1 tsp grated garlic
- 1 large tomato sliced – about one cup
- 1 tsp Blyss monkfruit sweetener
Method
- For the chicken: Marinade chicken in tumeric and salt and leave for at least 20min or overnight covered in fridge for best taste. Heat oil in a deep heavy pan or wok, add in garlic, ginger and green chilli and fry until fragrant. Pan fry the chicken in this oil till browned on both sides.
- For chutney: Heat oil in pan and fry the garlic and ginger till soft fragrant. Add tomato and fry till fragrant. Add chilli, salt and Blyss monkfruit sweetener. Fry till flavours are well-combined.
