This is the most delicious savoury ketogenic herb bread we have created so far. Peppered with thyme and chia seeds. This bread has a great texture without being eggy.

Ingredients
- 3 cups almond flour
- 1/2 cup flax meal
- 2 tbs psyllium husks
- 2 tbs chia seeds
- 2 tbs dried thyme
- 1 cup edam cheese cubed
- 1 tsp salt
- 2 cups of hot water or mild earl gray tea
- 1 tsp almond essence
- 1 tsp cream of tartar
- 2 tsp baking powder
- 6 egg whites
- 2 egg yolksΒ
- 1 tbs Blyss monkfruit sweetener
- 50g butter
- 40g olive oil
- optional: 1/2 cup sliced black pitted olives
Method
- Heat oven to 180 degrees C
- Separate the egg whites from the yolks and immediately beat them to a soft peak. Add cream of tartar and beat till whites are stiff.
- In a separate bowl, mix all the dry ingredients and stir in the softened butter, yolk and olive ail. Add in the hot tea and stir till combined. Leave it for 2 minutes till water is absorbed and it becomes a drier dough. Mix in the cheese cubes.Β
- With oiled hands, shape into buns on a lined tray and bake for 25-30 min. If you are baking into a loaf, extend cooking time by ten min. Place on rack to cool and allow leftover moisture to evaporate.
