Ingredients

  • 2 large eggs
  • ½ cup unsweetened almond milk or coconut milk
  • 2 tablespoons monk fruit sweetener (e.g., Blyss Monkfruit Sweetener)
  • 1 teaspoon pure vanilla extract
  • Pinch of salt
  • Cinnamon or nutmeg (optional garnish)

Method

Instructions:

  1. Preheat the oven:
    Preheat your oven to 325°F (165°C).
  2. Prepare egg mixture:
    Whisk eggs, monk fruit sweetener, vanilla extract, and salt in a mixing bowl until creamy and well-blended.
  3. Add milk:
    Slowly whisk in almond or coconut milk until fully combined.
  4. Pour and bake:
    Divide mixture into ramekins or a small baking dish. Sprinkle lightly with cinnamon or nutmeg if desired. Place ramekins in a baking dish filled halfway with hot water (water bath).
  5. Cook gently:
    Bake for 30-35 minutes or until custard is firm and a knife inserted into the center comes out clean.
  6. Chill and serve:
    Allow to cool, then refrigerate for 1-2 hours. Serve chilled.
