Ingredients
- 2 large eggs
- ½ cup unsweetened almond milk or coconut milk
- 2 tablespoons monk fruit sweetener (e.g., Blyss Monkfruit Sweetener)
- 1 teaspoon pure vanilla extract
- Pinch of salt
- Cinnamon or nutmeg (optional garnish)
Method
Instructions:

Preheat the oven:
Preheat your oven to 325°F (165°C). -
Prepare egg mixture:
Whisk eggs, monk fruit sweetener, vanilla extract, and salt in a mixing bowl until creamy and well-blended. -
Add milk:
Slowly whisk in almond or coconut milk until fully combined. -
Pour and bake:
Divide mixture into ramekins or a small baking dish. Sprinkle lightly with cinnamon or nutmeg if desired. Place ramekins in a baking dish filled halfway with hot water (water bath). -
Cook gently:
