Keto Chocolate Cheese Roll

Ingredients
Cake layer
4 Egg White
4 egg yolks
50g almond flour
80g coconut Oil
2 tbs lemon juice
80g Blyss Monkfruit sweetener
35g cocoa powder
a pinch of salt
30g plain yogurt or milk

100g cream cheese
40g icing sugar
1 tbs Lemon juice
Method
- Preheat the oven to 180 degree. Combine the egg white and addΒ Blyss Monkfruit SweetenerΒ and lemon juice andΒ whisk until stiff peaks. Grease the cake tin and set side.
- Combine the almond flour, oil and salt into a bowl and mix until well blended.
- Take 2-3 tablespoon of the batter into a small bowl and mix it with 2 tablespoon of egg whites.
- Spoon the mixture into a piping bag and start to draw the design on the pan. Once done, bake in oven for 1min and remove.
- Mix the cocoa powder and yogurt into the mixture. Fold in the egg whites until well blended and pour it into the tin.
- Bake in oven for 20 mins. Once done, remove from oven and transfer the cake to a greaseproof paper. Roll the cake and leave it covered to cool.
- Prepare the cream cheese filling. Make sure the cheese has cooled to room Temperature.
