Low Carb Pandan Waffle


  • 100g Blyss monkfruit sweetener
  • 40g vital wheat gluten
  • 500g coconut milk
  • 300g almond flour
  • Pinch of salt
  • 2 eggs
  • 1 teaspoon of pandan extract
  • 4 teaspoon of baking powder
  • 60g olive oil


  1. Sift the almond flour and mix the dry ingredients. 
  2. Beat the eggs and then with the Blyss monkfruit sugar till combined. 
  3. Add the wet and dry ingredients and combine. 
  4. Cook waffles in waffles maker as per machine instructions. If you are using the oven and waffle mold, bake at 350 degrees F or 180 degrees C for 15 min.
