Low carb leather noodles

Keto-ers and low carbers are always on the lookout for noodle alternatives. This recipe is a winner for a filling and protein rich choice, filled with the natural crunch, frangrance and sweetness of veggies.


1 cup carrots juliened 

1 cups bean sprouts 

250g thousand-leaf tofu

1 cup coriander stems and leaves cut into 2 inch lengths

1/2 cup wood ear mushrooms juliened

5 tbs olive oil

2 tbs sea salt

1 tbs oyster sauce

1 cup water

1 tsp sesame oil

sesame seeds to sprinkle over the cooked dish




  1. Open up the tofu and separate the layers before slicing into noodles.
  2. In a heated pan, cook the carrots with some oil till softened and caramelised.
  3. Add in the wood ear mushrooms and the tofu. Stir and add in the water and the seasoning.
  4. When the tofu is well softened, absorbing the flavours of the condiments, add in the beansprouts and after a quick turn, switch off the heat and serve with coriander. Fresh cut chillis add to the refreshing taste of this crunchy dish.
