Dreamy double cheese keto cloudcake

This is inspired by the double fromage cheesecake by Letao. So meditative to bake and almost foolproof if you combine your ingredients well and get rid of air-bubbles. So delicious with Blyss monkfruit sweetener.


Get ready 8 inch spring form cake tin and oven set to 155 Degrees Celsius.

Cake Layer

1 tsp vanilla extract
1 tsp baking powder
6 tbs Almond flour 
50g butter or walnut oil
1 tbs thick greek or coconut yogurt
1 egg or 1/4 cup egg replacement
2 tbs Blyss zero carb monkfruit sweetener

Baked cheese layer

150g cream cheese
150g heavy/whipping cream
2 tbs Blyss zero carb monkfruit sweetener
1 egg

Mascapone layer

140g whipping cream without sugar
70g Mascapone cheese
1 tbs Blyss zero carb monkfruit sweetener
1 tbs filtered water
1 level tbs gelatine
1 egg yolk (or 1 tbs thick sour cream)



  1. Sponge cake layer: Cream the butter with the sugar and wet ingredients. Add the flour and egg and combine until smooth. Put in cake tin and bake for 15 to 20 min. Pass a skewer through the cake – comes out clean when done.
  2. Let cake cool at room temperature.Trim the sponge cake with a knife to remove the crusty bits. I cut off about an inch and reserve the cake bits to make crumbles for decoration.
  3. Baked cheesecake layer: Using an egg beater, combine the sugar with the cream cheese and egg. Separately, whip the heavy/whipping cream till fluffy and thick. Combine both and then pour into the cake tin through a sieve to remove lumps. Bake for 20min, cool at room temperature and then chill in the refrigerator for at least 3 hours.
  4. Mascapone coating:soak the gelatin in water and set aside for 10min. Whipp egg yolk and sugar till thick and then continue in water bath with gelatin mixture till sugar is dissolved. Pass through sieve to remove lumps. Whip cream separately. Mix in mascapone. Pour this over the cheesecake. Chill in fridge covered.
  5. Pass the cake crumbs through sieve. Decorate the cake with it and voila! You are done!
