Crispy Almond Florentines

These are fabulous snacks for the festive period and a hot favorite for the pantry. Instead of the traditional way of using caramel to hold together nuts and seeds, this recipe uses egg whites and Blyss monkfruit sweetener that is healthy and will not spike your blood sugar.

Ingredients

120g almond flakes
25g pumpkin seeds
25g sunflower seeds
10g sesame seeds
1 egg white

25g Blyss Monkfruit sweetener (can add more if you prefer it sweeter)

Method

  1. Preheat oven at 160C. Grease and line baking tray with parchment paper.
  2. Combine the above ingredients, mix well.
  3. Spread thinly into round disc onto to baking sheet.
  4. Bake in the preheated oven for 15-25 minutes until golden brown.
  5. Remove tray from oven. Leave these florenttine to cool and store in air tight container.
