Churros!

Keto friendly churros, baked not fried. Delicious and great with that coffee on that lazy afternoon.

Ingredients

  1. 1 cup almond flour
  2. ½ tsp xantham gum
  3. Pinch of salt
  4. 1 cup of water
  5. 1 tbsp coconut oil
  6. 2 tsp Blyss monkfruit sweetener
  7. ¼ tsp cinnamon powder
  8. 1 large egg

Method

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper or non-stick silicone baking mat.
  2. Add all dry ingredients to a medium mixing bowl, whisk together and set aside.
  3. In a medium saucepan add water, Blyss monkfruit sweetener, cinnamon, and coconut oil and bring to boil. Turn off heat and allow mixture to rest for 3 minutes.
  4. Add the dry ingredients to pan and stir with a rubber spatula.
  5. Add the egg and continue stirring until well combined.
  6. Scoop churro dough into a frosting decorating bag fitted with a star piping tip.
  7. Pipe the dough directly onto the prepared baking sheet, in 6 inch strips.
  8. Bake for 15 minutes or until edges start to turn golden brown, then broil on low for 3 minutes.
